Drying Kinetics and Quality Analysis of Coriander Leaves Dried in an Indirect, Stand-Alone Solar Dryer

In this study, coriander leaves were subjected to three different drying techniques; direct sun, shade, and using an indirect solar dryer. the developed dryer, hot air obtained from a black-body collector was pushed by blower powered panel, sent chamber with multiple trays for thin-layer drying. Experiments conducted summer winter seasons, temperature relative humidity variations in measured data acquisition system. Indirect dryer performance evaluated compared sun shade kinetics, moisture diffusivity, product quality. The rate curves show linear falling throughout process. kinetic models are well-fitted Midilli Kucuk model. effective diffusivity of dried shows decreasing trend, (2.63 × 10−10 m2/s 1.05 m2/s) followed (1.31 6.57 m2/s), (6.57 10−11 3.94 respectively. Green color changes −7.22 −0.056, 3.15, −0.35 solar, drying, hue angle Chroma reduced 12% 32% total phenol content (TPC) value increases showing highest values (365 852 mg caffeic acid/100 g dry weight) while antioxidant capacity reaches 3.41 3.53 summer, respectively 0.22 μmol Trolox/g matter fresh leaves.
